Recipe Alert: Gambos al Ajillo

2 lbs raw shrimp, shelled and deveined
¾ cup olive oil
6 garlic cloves, finely chopped
1 tsp chili flakes
1 tsp mild Spanish paprika
2 Tbsp chopped flat leaf parsley
Salt and pepper to taste
Rustic bread

Season the shrimp with salt and pepper. 

Heat the oil to medium in a large sauté pan and add the garlic. Cook the garlic for about one minute or until it starts turning light brown.  

Immediately add the shrimp, chili flakes and paprika and cook over medium heat, stirring briskly for about 3-4 minutes or until they turn pink and curl. Season with salt and pepper to taste. 

Transfer to a serving platter and sprinkle parsley. Serve bread alongside for dipping into the garlic oil. Serves 4 as a main dish or 6 as an appetizer
