Natasha's Fresh Cocktails for Spring!

It’s the first day of Spring and our Bar Manager, Natasha, has put together three delicious libations to kick off the season!

Clover Club Cocktail (Vegan)
¾ oz fresh lemon juice
½ oz raspberry syrup (see below)
¾ oz Aquafaba (garbanzo bean water from a can of beans) [A replacement for egg whites)
1 ½ oz gin
Garnish with raspberries

Combine ingredients in a shaker and shake without ice for 10 seconds. Then add ice and shake for another 10 seconds. Double strain into a chilled Coupe glass, or what you have available.

Raspberry Syrup
4-5 raspberries per 1 ½ tsp of sugar-fine sugar

Cook down and strain.

Paloma Martini Reconstructed
2 oz Dolce Vida Grapefruit Tequila
3/4 oz Orange Liqueur
Splash of grapefruit juice

Combine ingredients in a shaker, shake, then strain into a chilled martini glass. Garnish with a lemon peel.

Mint Julip
1 1/2 - 2oz Bourbon (depending on how strong you like your Julip)
1 - 1 1/2 oz Simple Syrup (depending on how sweet you like your Julip)
2 - 4 fresh mint leaves
Water (I prefer soda water in mine)

Muddle mint leaves and simple syrup in either a bourbon glass or Julip glass. Add bourbon, ice, and top off with a splash of water or soda water. Garnish with mint leaves.
