Chef Tony’s Biscotti
I feel like biscotti often gets a bad reputation. People complain they are dry, flavorless, etc. So here's my recipe to change your mind!
4 Tbsp butter
¾ cup sugar, plus extra to sprinkle on top
2 eggs
1 tsp almond extract
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking powder
1 cup mix-ins (i.e. pistachios, cranberries, etc)
Pinch of salt
Preheat oven to 350 F, line a baking sheet with parchment paper.
Cream the butter and sugar in a stand mixer or with a hand mixer. Add eggs one at a time. Add extracts.
In a separate bowl: sift flour, baking powder, salt, and whisk them together. Add the dry ingredients to the wet ingredients, folding together with a spatula. Stir in mix-ins. Divide dough in half should make about two each 6-8” logs. Sprinkle with sugar.
Bake 20-25 minutes. Cool 30 mins, cut and place on sides. Bake another 12-15 minutes.
