Oysters 101: From Blue Island Oyster Bar

With Chef DJ Nagle. It’s an evening dedicated to our favorite aphrodisiac! Chef DJ, of Humboldt and the eagerly anticipated Blue Island Oyster Bar in Cherry Creek North, is here to educate and delight on the subject of these, the most exquisite and delectable of seafood appetizers. We’ll show you what to look for when purchasing fresh oysters at the seafood counter, the techniques of both shucking and eating oysters, and the best wines pairings, as we sample a selection of varieties with their complex tastes and flavors of the sea – from small and briny, to plump and sweet, even buttery and fruity – and prepare them in a number of different ways. This class will be limited to 15 students. Menu includes Raw Bar Oysters with a Trio of Classic Sauces – Mignonette, Cocktail and Horseradish Sauce; Grilled Oysters with Umami Butter; Deep-Fried Oyster Po’ Boy Sliders with Sauce Louis; Chilled Oysters over Shaved Cucumber Dill Ice.
